Strawberry Yogurt Parfait
There are desserts that take all afternoon, and then there is a strawberry yogurt parfait — five minutes, a glass, and something that looks like it came from a café. Layers of creamy yogurt, sweet strawberries and crunchy granola, stacked up so you can see every layer through the glass. It is the dessert I make when I want something pretty without turning the oven on, and it is the breakfast my family asks for on slow weekend mornings.
I first made parfaits with a tub of yogurt and a punnet of strawberries that were about to go soft, and I was surprised how good something so simple could taste. The secret is really in the layering: a spoonful of yogurt, a spoonful of berries, a sprinkle of granola, and repeat. The granola stays crunchy if you serve it straight away, and the honey drizzled over the top ties it all together. It looks impressive, it tastes fresh, and nobody needs to know it took five minutes.

Ingredients
- 300 g Greek yogurt (full-fat, for the creamiest result)
- 200 g fresh strawberries, hulled and sliced
- 100 g granola (your favourite — honey or nut works best)
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon icing sugar (optional, if the berries are tart)
- 4 whole strawberries, to top
- A few mint leaves, to serve (optional)
- 2 dessert glasses or jars, for layering
Method
- Put the sliced strawberries in a small bowl with the lemon juice and the icing sugar if you are using it. Stir gently and leave them for five minutes — the sugar draws out the juices and turns them into a lovely syrupy mess.
- Stir the vanilla extract into the Greek yogurt. Taste it and add a drizzle of honey if the yogurt is very tart — a little sweetness makes the layers balance better.
- Take two tall glasses or jars and start with a spoonful of yogurt in the bottom of each one. Spread it out so it covers the base — this is your first layer, and it holds everything else up.
- Add a layer of strawberries over the yogurt, spooning over a little of the juice from the bowl. The red against the white yogurt looks beautiful already.
- Sprinkle a layer of granola over the strawberries. Do not press it down — you want it loose and crunchy, not packed.
- Repeat the layers: yogurt, strawberries, granola, until the glasses are full. Finish with a swirl of yogurt on top — it should look like soft clouds.
- Drizzle the honey over the top in a slow zigzag, so it catches the light. Pop a whole strawberry on top of each glass and add a mint leaf if you have one.
- Serve straight away while the granola is still crunchy, or chill the parfaits in the fridge for ten minutes if you like them cold. Either way, eat them with a long spoon so you get a bit of everything in every bite.
Serving and Storage
Serve these parfaits cold, in the glasses, with a long spoon and a smile — they are a dessert, a breakfast and a healthy snack all in one. They are best eaten within a few hours of making, because the granola softens the longer it sits in the yogurt. If you are making them ahead, layer the yogurt and strawberries and keep the granola in a separate little pot to sprinkle on just before serving — that way it stays perfectly crisp.
Tips
A few things I have learned along the way. Use full-fat Greek yogurt if you can — the low-fat kind is thinner and the layers slide around. Any berries work in this recipe, so swap the strawberries for raspberries, blueberries or a mix of all three when they are in season. And if you are making it for children, leave the honey out of the yogurt and let them drizzle their own on top — they love doing it themselves. A jar with a lid makes this the perfect packed lunch or picnic dessert.
That is a strawberry yogurt parfait: ten minutes of layering, no cooking at all, and a glass of creamy, crunchy, fruity goodness that looks like it took far more effort than it did. It is the dessert I make when friends drop in, the breakfast that makes a normal morning feel special, and the recipe that proves simple food can still be beautiful. You can also make a chocolate version by stirring a spoonful of cocoa into the yogurt, or a tropical one with mango and passion fruit instead of strawberries. A drizzle of maple syrup works just as well as honey, and a handful of chopped nuts on top adds another layer of crunch. Give it a try this weekend — and make two, because one is never enough.
