Oven BBQ Chicken Wings

Oven BBQ Chicken Wings

There is something about a tray of chicken wings coming out of the oven that makes the whole house go quiet for a second. The smell of smoky barbecue sauce hits the hallway before the tray even reaches the table, and suddenly everyone is in the kitchen, asking when dinner is ready. That is exactly what happens at our house whenever I make these oven BBQ chicken wings, and honestly, I would not have it any other way. They are the kind of food that turns an ordinary weeknight into a small celebration, and they are so easy that I make them at least twice a month.

I used to think good chicken wings had to come from a restaurant or a grill. Then one rainy Saturday, with no grill and a pack of wings in the fridge, I decided to try the oven — and I never looked back. The oven does two wonderful things: it renders the fat slowly so the skin goes crisp and golden, and it gives the sauce time to caramelise into that sticky, glossy coating that makes you lick your fingers. No deep fryer, no smoke, no standing over a grill. Just a baking tray, a wire rack and a bit of patience.

Ingredients

  • 1 kg chicken wings, split at the joint, tips removed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chilli powder (optional, for a little heat)
  • 120 ml barbecue sauce (your favourite — smoky or honey works best)
  • 1 tablespoon honey
  • 1 spring onion, finely sliced, and sesame seeds, to serve (optional)

Method

  1. Heat the oven to 200°C (180°C fan) and line a large baking tray with foil. Set a wire rack on top of the tray and give it a light spray or brush of oil — the rack is the secret to crisp wings, because it lets the hot air reach underneath and stops them sitting in their own fat.
  2. Pat the wings very dry with kitchen paper. This step matters more than anything else: wet skin steams instead of crisping, and no amount of sauce will fix soggy skin afterwards. Take your time and get them properly dry.
  3. Put the wings in a big bowl with the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper and chilli powder if you are using it. Toss them really well with your hands until every wing is coated in the spice mix. The paprika is what gives the wings their lovely warm colour before the sauce even goes on.
  4. Arrange the wings on the wire rack in a single layer, skin-side up, with a little space between each one. Crowding the tray makes them steam, so use two trays if you need to — it is worth the extra washing up.
  5. Bake for 35 minutes, then turn each wing over and bake for another 10 minutes. By now they should be golden, crisp at the edges and cooked right through, with the juices running clear when you pierce the thickest part.
  6. While the wings bake, warm the barbecue sauce and honey together in a small pan over a low heat for two or three minutes, just until it loosens and smells sweet and smoky. Do not let it boil — you only want it warm and pourable.
  7. Tip the hot wings into a clean bowl, pour the warm sauce over them and toss until every wing is glossy and coated. The sauce clings best while the wings are piping hot, so work quickly.
  8. Pile the wings onto a platter, scatter over the sliced spring onion and a pinch of sesame seeds if you like, and serve straight away while the sauce is still sticky and the skin is still crisp.

Serving and Storage

Serve these wings hot, straight from the bowl, with something cool and fresh alongside — celery and carrot sticks with a little ranch or blue cheese dip are the classic pairing, and a pile of napkins is not optional. They also sit happily next to fries, coleslaw or a simple green salad if you want to make a proper meal of them. Leftovers keep in the fridge for two days in a sealed container, and they reheat best in a hot oven for ten minutes, which brings the skin back to life. The microwave will warm them through, but the crispness will be gone, so the oven is worth the wait.

Tips

A few things I have learned along the way. If your wings are very large, give them an extra five minutes in the oven before saucing. If you like them extra sticky, brush on a second coat of sauce and pop them back in the oven for five minutes after tossing — the sauce bakes into a gorgeous glaze. And if you are feeding children, leave the chilli powder out and let the grown-ups add hot sauce at the table. The wire rack is not essential, but it really does make a difference, so if you do not have one, a roasting tin with a rack from your grill pan works too.

That is oven BBQ chicken wings: fifteen minutes of hands-on work, forty-five minutes in the oven, and a tray of sticky, smoky wings that disappear faster than you would believe. They are the dinner I make when friends drop in unexpectedly, the snack that keeps everyone happy on a match night, and the recipe my family asks for most often. Once you have made them in the oven, you will wonder why you ever thought wings were restaurant food. Give them a try this weekend — and keep plenty of napkins close.
