Weekly Meal Prep for Beginners: A Simple Plan
Meal prep sounds like a big job, but it is really just cooking once and eating well all week. This simple beginner plan takes about two hours on a Sunday and gives you healthy lunches and dinners ready to grab — no more rushed takeaways or skipped meals.
Reading time: 5 minutes | Skill level: Beginner | Tools: Meal prep containers, a large pot, a baking tray
The Simple Weekly Plan
- Pick five meals. Choose three dinners and two lunches you actually enjoy, and repeat them through the week. Variety comes from sauces and sides, not from cooking fifteen different dishes.
- Write one shopping list. List every ingredient for the five meals, then shop once. Group the list by section — produce, protein, pantry — so the shop takes half the time.
- Cook the grains first. Start a big pot of rice or quinoa. While it cooks, roast a tray of vegetables and a tray of chicken or chickpeas in the oven.
- Build the boxes. Divide the grains, protein, and vegetables into containers, adding a different sauce or dressing to each so no two days taste the same.
- Store it right. Cool the boxes before lidding them, and keep them in the fridge for up to four days. Freeze anything meant for Thursday or Friday.
- Reheat and enjoy. Reheat gently in the microwave, adding a splash of water to rice and grains so they stay soft. Top with fresh herbs or a squeeze of lemon.
Tips
Start small — prep just three days of lunches in your first week, then build up. Keep the sauces separate until serving so nothing goes soggy. And do not aim for perfection: a simple week of home-cooked boxes beats a perfect plan you never start.
